Watermelon Gaspacho Soup

This is a twist on the regular gaspacho soup - it was a Friday night creation that instantly became one of my favorites!!

 

Be sure to make this in the summer/early fall when the ingredients are in season!

Ingredients

1-2 Garlic Cloves or 1 Tbsp. Garlic Scape Pesto
1-2 Green Onions - thinly diced
1 Red Pepper
1 English cucumber
1/4 Watermelon
1 English cucumber
500 ml Tomato Juice
1 pint Cherry Tomatoes
1 green pepper
Maldon Salt and fresh Pepper to taste
5 Red Ripe tomatoes (peeled and diced)

Directions

1. Peel and dice cucumber and large tomatoes

2. Dice pepers and onion

3. Add either crushed garlic or one Tablespoon garlic scape pesto

4. Dice 1/8 of the watermelon

5. Place all ingredients in a large bowl

6. In food processor blend grape tomatoes until they liquefy - strain them into the vegetables.

7. Place 1/8 watermelon in food processor and liquefy - add to the bowl

8. Mix all ingredients together adding tomato juice

9. Salt and pepper to taste.

10. Refrigerate for about an hour before serving - this is a cold soup
