Mushroom Black Bean Patties

If it's 'Meatless Monday' or just a day that you want a veggie meal - this is your recipe.

This one is family approved!  Tasty, full of fiber, low in fat and not difficult to make.

You can serve it as a typical burger on a bun, but we tend to love it with a side of guacamole and a green salad.

Ingredients

8-10 Button Mushrooms - chopped
2 Cloves of Garlic - minced
5 Organic Sundried Tomatoes - soaked
1 Egg
1 cup Quick Oats
1/2 Cooking Onion - chopped
1 can Eden Organics Black Beans
1 Tbs. Olive Oil
1/2 cup Crumbled Feta cheese (or Goat's Cheese)

Directions

Sautee garlic and onion in olive oil or coconut oil for about 2 minutes (until onions become clear) over medium heat (so garlic doesn't burn).

Add mushrooms and continue to cook until the mushrooms begin to sweat and become soft.

In a food processor blend the :black beans, egg, sundried tomatoes and a touch more olive oil until it becomes a paste.

Add the mushrooms and process again until it comes together into a 'meaty' slightly chunky paste.

Pour the blended mixture into a large mixing bowl where you will add the dry ingredients and the crumbled Feta cheese.

Heat up a large skillet, melt coconut oil and scoop onto the pan about 1/4 cup of mixture.  Using a wet wooden spoon, flatten onto skillet making a patty shape.

Cook approximately 7 minutes per side - flipping a couple of times so the outside becomes crispy but not burned.
