Amazing Roasted Chickpeas

These roasted chickpeas can put on their Superfood Cape! They are crunchy, tasty and your best friends if you are trying to shed a couple of pounds. They are high in fiber (great for feeling full and digestion support) and also help balance blood sugar and insulin secretions! WooHoo!

Ingredients

2-3 cans organic Chickpeas (Garbanzo Beans)
1 TBSP Coconut oil
1-2 TBSP olive oil
Generous amount of Herbamare or Sea Salt

Directions

Lay out the canned chickpeas and pat dry as much as possible.  If you have extra time, let them sit out until they are dry - they get crunchier this way.

Preheat the oven to 375 degrees farenheight.

Toss them with olive oil and a seasoning of your choice - these ones are a simple salty taste - I used Herbamare - its a sea salt vegatable herb mix.

Put the coconut oil on the sheet - place the sheet in the oven for about 2 minutes for the coconut oil to liquify - then take it out and mix the chickpeas all around so they are covered.

Lay them flat on a cookie sheet and bake them for an hour. Check them after about 40 minutes to make sure they are not burning and that they become crunchy.

Enjoy them as a snack - or even sprinkle them on a salad as a crouton substitute.
